Ingredients:
  • 4 boneless, skinless chicken breasts
  • 2 medium-sized potatoes, cut into small cubes
  • 2 medium-sized carrots, sliced
  • 1 medium-sized onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 4 cloves of garlic, minced
  • 4 tablespoons olive oil
  • 2 teaspoons dried Italian seasoning
  • Salt and pepper to taste
  • Aluminum foil

    Instructions:
    1. Prepare the campfire: Build a fire and allow it to burn down to hot coals.

    2. Preheat the campfire grill or grate over the coals.

    3. Tear off four large sheets of aluminum foil, approximately 12x12 inches each.

    4. In a bowl, combine the minced garlic, olive oil, dried Italian seasoning, salt, and pepper. Mix well.

    5. Place one chicken breast in the center of each foil sheet. Season the chicken breasts with salt and pepper.

    6. In a separate bowl, toss the potatoes, carrots, onion, and bell peppers with the garlic and olive oil mixture until well coated.

    7. Divide the vegetable mixture equally among the foil packets, arranging them around the chicken breasts.

    8. Fold the sides of each foil packet over the chicken and veggies, sealing them tightly to create a packet. Leave a little room inside for steam to circulate.

    9. Place the foil packets on the preheated grill or grate, directly over the hot coals.

    10. Cook the foil packets for approximately 20-25 minutes, or until the chicken is cooked through and the vegetables are tender. Carefully open one packet to check for doneness.

    11. Once cooked, carefully remove the foil packets from the grill using tongs or heat-resistant gloves.

    12. Allow the foil packets to cool slightly before opening them. Be cautious of the steam when opening.

    13. Serve the chicken and veggie foil packets as is or transfer the contents to plates.
