Ingredients:
- 8 large flour tortillas
- 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
- 1 bell pepper, thinly sliced
- 1 red onion, thinly sliced
- 1 cup sliced mushrooms
- 1 jalapeno pepper, seeded and finely chopped (optional)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Salsa, guacamole, or sour cream for serving (optional)
Instructions:
-
Preparing the Campfire: Find a safe and suitable location for your campfire. Make sure to follow any regulations or guidelines for open fires in the area. Allow the fire to burn down until you have a bed of hot coals.
-
Preparing the Ingredients: In a skillet or over the campfire grill grate, heat the olive oil. Add the bell pepper, red onion, mushrooms, and jalapeno pepper (if using). Sauté the vegetables until they are tender and slightly caramelized. Season with salt and pepper to taste. Remove from heat and set aside.
-
Assembling the Quesadillas: Take one flour tortilla and sprinkle a generous amount of shredded cheese evenly over one half of the tortilla. Add a spoonful of the sautéed vegetable mixture on top of the cheese. Fold the tortilla in half, pressing down gently to seal the filling.
-
Cooking the Quesadillas: Place the filled tortilla onto a preheated cast-iron skillet or griddle over the campfire. Cook for about 2-3 minutes on each side, or until the tortilla turns golden brown and the cheese is melted and gooey. Repeat the process with the remaining tortillas and filling.
-
Serving: Remove the cooked quesadillas from the skillet and let them cool for a minute or two. Cut each quesadilla into wedges and serve with your favorite condiments such as salsa, guacamole, or sour cream. Enjoy the gooey, smoky goodness of the Campfire Quesadillas!
Note: If you don't have access to a campfire, you can also prepare these quesadillas on a stovetop using a skillet or griddle. Simply follow the same instructions but adjust the heat accordingly.
Happy camping and bon appétit!
